Germany calls raw milk Rohmilch or Vorzugsmilch
German has several terms for raw milk and related dairy products, and knowing the right word matters when searching for sources. Rohmilch
Rohmilch is the German word for raw milk: unprocessed milk sold directly from the producing farm without pasteurization, homogenization, or heat treatment. Rohmilch ab Hof means raw milk sold directly from the farm gate. Under German food law, raw milk sold for human consumption must be from the current or previous day’s milking and must carry the label “Rohmilch, vor dem Verzehr abkochen” (raw milk, boil before consumption). The label is mandatory on all packaging and machine signage.
Vorzugsmilch
Vorzugsmilch translates literally as “preferred milk” and refers to certified raw milk licensed for retail sale in stores. Unlike Rohmilch ab Hof, which is sold directly from the farm, Vorzugsmilch is packaged in sealed bottles and distributed through specialist and organic retailers. Farms producing Vorzugsmilch face monthly veterinary inspections covering bacterial counts, udder health, Campylobacter, Salmonella, Listeria, and E. coli. The license is deliberately limited in number, making Vorzugsmilch the less common of the two raw milk channels in Germany. Heumilch
Heumilch means hay milk. The term indicates the cows are fed primarily on hay and fresh grass, the German equivalent of the grassfed designation common in English-language markets. Heumilch is not a raw milk designation on its own: it can be pasteurized or raw. Some Rohmilch ab Hof farms also hold Heumilch certification, and the combination appears on labels and farm shop signage in Bavaria and Baden-Württemberg.
Bonus: Butterschmalz
Butterschmalz is clarified butter, equivalent to ghee. It is widely available at German farm shops and organic stores alongside raw milk and raw milk cheeses.
Reading a German Raw Milk Label
Three label elements confirm you have raw milk from a German farm:
- Rohmilch: confirms the milk is unpasteurized
- Vor dem Verzehr abkochen: the mandatory boiling advisory
- Ab Hof or the farm name and address: confirms direct farm origin
Vorzugsmilch packaging adds a best-before date and retail authorization number. Both channels will carry one or both of these designations clearly.
