Raw milk is legal for direct sale to consumers in Ireland under the EU dairy hygiene framework. Permitted sales channels include farm gate sales, farmers markets, and supply to local independent retail establishments (such as grocers and butchers) within approximately 20 kilometres of the farm. Sale through national supermarket chains or broad distribution networks is not permitted.

Producers selling more than 30 litres of raw milk per week must register with the Department of Agriculture, Food and the Marine (DAFM) and meet enhanced hygiene standards: twice-yearly herd testing for tuberculosis, and compliance with Somatic Cell Count and Total Bacteria Count criteria. All raw milk must carry a label identifying it as "raw milk" per EU labelling requirements.

The governing legislation is EU Regulation (EC) No 853/2004 (specific hygiene rules for food of animal origin), which Ireland applies directly as an EU member state. The Raw Milk Ireland industry guide, published in 2018 in conjunction with DAFM and the Food Safety Authority of Ireland (FSAI), sets out the practical standards for producers.
