What is a quarter, half, or whole cow?

Buying a share of an animal means purchasing beef in bulk before it is processed, then having it cut and wrapped to your specification at a butcher. A quarter typically fills a small chest freezer and includes a mix of ground beef, roasts, and steaks. Is all farm beef grass-fed?

Does ground beef have to say which country it came from?

In the United States, no. Mandatory country-of-origin labeling for beef was repealed by Congress in 2015, so retail ground beef can be sold without any origin statement. A separate USDA rule effective January 1, 2026 tightened the voluntary Product of USA claim so it now means the animal was born, raised, slaughtered, and processed in the United States, but using that claim remains optional. Can I list a farm that only sells beef?
