Germany has two distinct legal pathways for raw milk. Vorzugsmilch is a certified packaged raw milk product that may be sold in retail shops. Farms producing Vorzugsmilch are subject to rigorous oversight: federal veterinary services must initially approve each farm, after which local veterinary authorities conduct monthly inspections, take individual cow milk samples, and collect fresh product for laboratory testing.

Separately, unpackaged raw milk may be sold directly at the farm where it was produced. Farm-direct raw milk must be from the day of or the previous day's production, kept below 8°C from milking to sale, and carry a mandatory label: "Rohmilch — vor dem Verzehr abkochen" (Raw milk — boil before consumption). Sales through any off-farm intermediary are not permitted for this unpackaged category.
