Denmark Raw Milk Laws & Regulations

Raw milk (rå mælk) is sold in Denmark directly from dairy farms to consumers, at the farm or delivered to the buyer. Cow, goat and sheep milk may all be sold. The rules are set out by the Danish Veterinary and Food Administration (Fødevarestyrelsen).

Is raw milk legal in Denmark?

Yes. A milk producer may sell raw milk from its own animals directly to consumers, from premises on the farm or by delivering it to the individual buyer.

Rules for direct sales

• Volume. Up to 70 litres of raw milk a week, documented for each financial year.
• Freshness. The milk is sold raw and untreated, cooled to 6°C or below straight after milking, and sold within 24 hours of milking.
• Quality. The milk meets the limits for bacteria, somatic cells and veterinary medicine residues, and cattle herds must be in Salmonella Dublin level 1.
• Containers. The farm can supply containers, or buyers can bring their own.
• Registration. The farm registers the sale with Fødevarestyrelsen, is registered as a primary producer, and has its animals in the Central Husbandry Register (CHR).

Direct sales are kept separate from any other food activity on the farm.

Supplying shops and restaurants

A milk producer may also sell raw milk without any volume limit to food businesses such as shops, restaurants and wholesalers, with no separate registration for that activity. The receiving business follows its own hygiene rules for how the milk is used.
