Uzbekistan has no confirmed explicit prohibition on raw milk retail or farm-direct sales. Cabinet of Ministers Decree No. 474 (July 7, 2017) established a Technical Regulation on the Safety of Milk and Dairy Products, which entered into force approximately eighteen months after official publication (early 2019). This regulation covers safety requirements for dairy products in circulation in Uzbekistan and was modelled in part on the EAEU TR CU 033/2013 framework. Oversight is carried out by the Agency for Food Safety of Uzbekistan. Uzbekistan has observer status in the EAEU but is not a full member.
Uzbekistan is the largest milk producer in Central Asia. Traditional soured and fermented dairy products — qatiq (strained yogurt), suzma, ayran, katyk, and kurt (dried cheese) — are produced from raw milk and are central to Uzbek food culture. Fresh raw milk is widely sold at bazaars throughout the country. Formal regulations on quality exist, but enforcement in informal bazaar settings is limited.
